The Charm of Ohishi Shuzo (Mizukami Village)

Mizukami Village is located at the very upper reaches (the source area) of the Kuma River, whose waters originate from places like Mount Ichifusa, which we introduced previously. Ohishi Shuzo is a distillery that fully benefits from this abundant natural environment.

Here are the notable points about this distillery:

Pure Water and Rice from the Source: While they use “rice” and “groundwater from the Hitoyoshi-Kuma region,” which are the strict requirements for the globally recognized Kuma Shochu brand (GI), Ohishi Shuzo uses the absolute purest water from the very source of the Kuma River. This results in an incredibly mellow and deeply flavorful taste.

Traditional Appearance: The magnificent entrance with a hanging sugidama (cedar ball) and the white-walled brewery seen in the background of the illustration evoke the deep history of traditional Japanese sake brewing. The contrast of creating innovative, barrel-aged shochu that would surprise even whisky fans within such a historic and traditional space is simply irresistible.

Shochu Sennin (Shochu Sage)

Premium Barrel-Aged Kuma Shochu: “Ohishi”

Held in the arms of the Shochu Sage, this is a premium bottle of ‘Ohishi,’ the signature brand from Ohishi Shuzo in Mizukami Village, which we discussed earlier.

Here is what makes this specific bottle so special:

  • Special Limited Edition: The diagonal white label on the neck reads “Tokubetsu Genteishu,” meaning it is a special limited edition. It is a premium offering that showcases the true craftsmanship of the distillery.
  • Amber Aged: If you look closely at the main label, it says “Kohaku Jukusei” (Amber Aged). This is Ohishi’s greatest signature. The shochu is carefully aged for a long period in a combination of sherry and cognac casks. This resting process transforms the clear spirit into a beautiful golden-amber color.
  • Whisky-like Profile: Because of this barrel-aging process, it develops a rich, sweet aroma with notes of vanilla and fruit. It goes completely beyond the traditional image of shochu! Many first-time drinkers are surprised to find it drinks much like a fine single malt whisky or high-quality brandy.
  • Best Ways to Enjoy: To fully appreciate its complex aroma and smooth texture (thanks to the pure source water of the Kuma River), it is best enjoyed straight, on the rocks, or even as a highball.
